Sage was used extensively in the Middle Ages to mask the taste of rancid meat.
It not only aided in the digestion of fatty foods, it's mild antiseptic
action helped people live through a rotten meal.
Sage shouldn't be relegated to merely the inside of a turkey. Sautéed
with garlic and white wine, sage adds to an elegant pork entree. Blend
sage leaves into cheese or include it with other herbs in butters.

General Information
Another classic herb plant, so many varieties. Sun, well draining soil and very, very little fertilizer will reward you with a sublime plant. The tender Sages are host to butterflies and require a bit richer soil.

Culinary Uses
If you are going to cook with sage nothing beats plain old garden sage, Saliva officialis. Herbalists sometimes say the the tender sages are good in fruit drinks and fruit salad. I don't agree, but then I hate to cook. I find them wonderful for one thing only, hummingbirds. The bright red tubular flowers that come very late in the summer are made to order for these birds. They bloom abundantly until a heavy frost.
Landscaping Uses
Any of the tender Sages (Salvia elegans) will be an asset to your landscape just for the red flowers. The other sages really do look stately because of their compact shape and color. Except for Clary Sage. That is a whole new ball game. You either love it or hate it. The first year you get a nice well behaved rosette of leaves. The second year you get a 3 foot tall presence that has quite unusual flowers. Most people like the distinctive aroma. I found it way overbearing. I thought it needed a bath. I grow it only on request.
