You can eat Lavender flowers. Add the flower to vinegars or jams. Crystallize the flower to decorate desserts. Lavender sugar cookies are especially elegant.
Lavender pillows are used to treat travel nausea, insomnia and, headache.
Lavenders are a fine genus to collect as they make weeding a sensuous task. Collecting and defining the different varieties is a pleasure. We have others, just ask.
Growing Lavender
General Information
No Thyme carries several species and cultivars of lavender.
The angustifolias are sometimes referred to as English Lavender but angustifolia just means narrow leaves. These are the hardiest lavenders, tolerating temperatures that reach 0 degrees. They are early blooming and great for drying. I carry Munstead, Hidcote, Lavender Lady and a pink blooming Hidcote.
A few cultivars are mid-season blooming and charming. I offer Grosso and Provence and I have found them just as hardy as the angustifolias. These are referred to as L. X intermedia know as Lavandins from the two words LAVENDERer and INtermedia. They are a cross between angustifolia and latifolia (spike lavender). I have Francesco DeBaggio to thank for explaining this to me. These are my current favorites, terrific in the garden and for drying.
Stoechas Lavender is sometimes referred to as Spanish. It is know for the wings on it's blooms. Not quite as hardy as the above, being at risk if the temperature stays much below 10 degrees. It blooms continuous if you are diligent about deadheading. Always a showstopper but it is not good for drying.
Dentata lavender sometimes referred to as French is tender at 20 degrees. Dentata means toothed. This is a lavender that can be grown indoors with a bit of luck.
All lavenders need as much sun as you can find and loose well draining soil. Over fertilizing this plant will detract from the scent it produces, as is true with many perennial herbs. Cut back in early spring and again in early fall if you want to keep your plants from becoming woody. Perhaps by 1/2 in spring and a third in the fall. If you live in Florida or any part of the country that has high humidity you will have a tough time growing lavender.
Growing Lavender Indoors
I wish it survived well indoors. You can nurse the dentata through the winter inside but take it out for frequent airings when the weather is mild.

Culinary Uses
Although you might never think to cook with it, you can. The pulverized flowers will add a unique flavor to custards, salads, and sugar cookies. The flower looks beautiful on any dessert especially chocolate. There are a thousand other uses for lavender, from throwing it in your bath for muscle relaxation to putting it in furniture oil.
Landscaping Uses
A stand of well tended lavender in bloom is so lovely for you and the bees.
